Head Chef Josh Kraupner-Taylor has crafted a five course Truffle Progression designed to highlight the rich, earthy flavours of this highly sought after delicacy. Wine progression is thoughtfully selected to complement each course, available as an optional pairing.

Release of 2022 LJM Pinot Noir

LJM is the latest addition to the Paringa Estate portfolio. Quite simply, it’s the best of the best; a blend of our finest single vineyard barrels of pinot noir, from an exceptional vintage, 2022.

 

It’s a wine which has taken several decades to create. The fruit comes from our oldest pinot noir blocks, planted in 1988. It is handpicked, destemmed, and fermented in our 3,500 Litre French oak foudres. It is then aged in a combination of new and old barrels. The final stage is an extensive tasting of all the wines by Lindsay and Jamie to choose which barrels will go into the blend.

 

It’s the ultimate collaboration between father and son. A combination of Lindsay’s knowledge and experience, and Jamie’s flair and technical expertise.

 

Lindsay established the Paringa Estate vineyard nearly forty years ago on the site of a derelict apple orchard in Red Hill South. It’s a very special site. A sheltered, north facing amphitheatre on ten acres of un-irrigated red volcanic soil.

 

Lindsay was a teacher by profession, with a great love of the land, but no formal training in wine science. He knew that great wine begins in the vineyard, so his aim was always to produce the best fruit he could. Over the years his dedication and hard work has resulted in some of the most awarded wines in the country.

 

Jamie has a degree in Viticulture and Oenology from the University of Adelaide. He joined the winemaking team in 2012 and was appointed Head Winemaker in 2017. His talent and dedication have made a big impact on the family business.

 

When two great talents come together, the result is an outstanding pinot noir called LJM.

 

The letters form the combined initials of Lindsay McCall and Jamie McCall. It’s their joint signature.
